Emcesa Launches 'Sabores de Tiempo' Premium Line Utilizing Slow-Temperature Cooking

Edited by: Olga Samsonova

Spanish food manufacturer Emcesa, marking its 40th anniversary, introduced its new premium prepared meal line, 'Sabores de Tiempo,' at the recent Alimentaria trade fair. The collection is specifically designed to address growing consumer demand for offerings that successfully merge high-quality gastronomy with convenience. The entire range is founded upon a commitment to traditional culinary methods, primarily employing extended periods of low-temperature cooking to achieve superior texture and flavor depth.

The core methodology for the 'Sabores de Tiempo' line centers on slow-temperature cooking, a technique valued globally for its ability to intensify ingredient aromas and improve textural characteristics compared to rapid heating processes. This gentle heat application is known to break down tough connective tissues in meats, resulting in exceptionally tender and juicy final products, which serves as a key differentiator for this premium offering.

Javier Mancebo, Emcesa’s General Director, confirmed the positive reception at Alimentaria, noting the new range aligns with contemporary consumer needs for authentic flavor in ready-to-eat formats. The product portfolio features a mix of established Spanish classics and new additions, all refined through this slow-cooking lens. Traditional offerings include the comprehensive cocido madrileño, carrillada de cerdo al vino dulce, callos a la madrileña, and rabo de ternera al vino tinto.

New items in the line include fabada tradicional, costilla de vaca al bourbon, and the featured panceta a la BBQ coreana. The inclusion of Korean BBQ pork belly exemplifies the application of Emcesa’s signature long, slow-temperature method to international cuisine, translating the tenderness achieved in specialized recipes into a convenient format. This technique allows the meat to absorb complex marinade flavors over several hours.

To visually underscore its premium positioning, Emcesa has executed a complete redesign of the product packaging, prominently featuring the color black to convey a more elegant and modern shelf presence. This product and packaging evolution marks a significant step in the Toledo-based company's strategy to enhance its standing in the value-added prepared meals sector, balancing culinary heritage with current market trends.
