Shibuya Toast (Honey Brick / Shibuya Honey Toast / Brick Toast) is one of the most Instagrammable and "wow" Japanese desserts, resembling a massive honey brick that has dominated social media for years.

What Is It?

It is a hollowed-out brioche cube filled with toasted bread cubes, honey, ice cream, and various syrups.

  • A thick slice (or half) of brioche, Japanese milk bread (shokupan), or pain de mie—a large rectangular loaf—is used as the base.
  • The center is carved out, leaving walls 2–3 cm thick to create a "box" or "brick."
  • The interior and exterior are coated with a mixture of butter and honey (sometimes with added sugar and cinnamon).
  • It is then baked until the outside forms a crispy caramelized crust while the inside remains soft and warm.
  • The removed bread is cubed and toasted or baked with honey until crunchy.
  • The "box" is then filled with these crispy bread cubes and topped with ice cream, whipped cream, fresh berries or fruit, syrups (chocolate, condensed milk, fruit), cookies (Pocky, Oreo), marshmallows, or any other sweets as desired.
  • Finally, it is drizzled with more honey or condensed milk.

The result is a massive warm, crispy "brick" containing cold ice cream and a sweet medley of toppings. The contrast of temperatures and textures—crunchy, soft, and creamy—makes it incredibly addictive.

History

The dessert originated in Tokyo's Shibuya district during the economic boom of the 1980s. It gained popularity in cafes and karaoke bars as a late-night treat after parties. Over time, it spread across Asia—particularly to Taiwan, Thailand, Singapore, and Malaysia—before taking Instagram and TikTok by storm globally. In 2025–2026, it is trending once again, with many cafes experimenting with new fillings like matcha ice cream, banana pudding, and salted caramel.
