Romanian Students Innovate with Sustainable Kvass

In Iași, Romania, a team of students from the University of Life Sciences "Ion Ionescu de la Brad" developed and showcased ROOTS, a novel non-alcoholic beverage, at Ecotrophelia 2025.

ROOTS is crafted from upcycled ingredients, including spent malt, rye bread, and blackcurrant powder, drawing inspiration from the traditional Eastern European kvass recipe.

This innovative drink reimagines the classic kvass into a modern, sustainable, and functional product. It addresses food waste by utilizing byproducts and promotes a healthy lifestyle through its carefully selected ingredients.
