In a unique collaboration, Onkyo has partnered with Anderskretch, de nuance, and Yoshikura Sake Brewery to introduce "Né-ro-zake" (Yui-ne). This Japanese sake is infused with the melodies of singer Mihho Fukuhara. The sake is crafted by exposing fermentation tanks to Fukuhara's music, facilitated by a specialized sound-generating device. This application of sound technology in fermentation is supported by Onkyo's patented processes, which involve applying specific sound vibrations during the brewing period.
Onkyo has been actively researching the impact of sound and vibration on fermentation. This includes joint research with Tokyo University of Agriculture and Gekkeikan Sake Company, Limited, with findings on the analysis of sake brewing fermentation processes under acoustic vibration conditions presented in 2023. Onkyo has also filed patent applications for systems and methods related to food and sake manufacturing using sound and vibration, demonstrating a forward-thinking product development approach.
The "Né-ro-zake" is scheduled for a preview release at an event on October 5, 2025. Wider availability is planned through de nuance's e-commerce platform, the "Otoiro Sake Online Shop."
