Ingredients:
1 cup bulgur
2 cups boiling water
1 cucumber, diced
1/2 cup chopped fresh herbs (parsley, mint, dill)
1/4 cup pistachios, chopped
1 (15-ounce) can chickpeas, rinsed and drained
1/2 cup feta cheese, crumbled
Dressing: 1/4 cup olive oil, 2 tablespoons lemon juice, salt and pepper to taste
